Zucchine alla scapece
These amazing zucchine are flavoured with garlic, mint and vinegar. They are bursting with flavour! Make them the day before if you can. Great side dish to any meal. Ingredients for 4 people:
3-4 courgettes
Oil for frying
2 cloves garlic chopped
Sprig mint
30 ml of white wine vinegar
to taste Salt
Method:
Wash courgette, dice into thin rounds.
Place on kitchen paper. Sprinkle with salt to draw out the water.
Leave for 20 mins or so. Cover them with more paper to dry properly. They must be dried well.
Heat a good amount of oil in pan or wok.
Fry courgette in batches until golden brown. Drain on kitchen paper. Put them in a bowl.
Chop garlic and mint. Put in a small pan.
Add vinegar. Heat gently until it bubbles.
Pour vinegar, mint and garlic over the courgettes. Season with a little salt.
Mix, cover and leave to marinate for a few hours. Over night in the fridge is best if you can.
