Pizzette
Pizzette is Italian for "mini pizzas" - they are great to make and share among friends and family. Even great for the kids too! For us it's a Saturday lunch treat or for special occasions like New Years Eve lunch. Simple ingredients makes these delicious snacks. Depending on the size of your baking tray, you can cook these in batches. They also freeze well.
Ingredients for 3-4 people:
300 g flour
150 ml lukewarm water
7 g fresh brewers yeast
7 g sugar
7 g salt
20 ml olive oil
Topping :
Tomato passata sauce
Mozzarella chopped up and drain of liquid
Fresh Basil leaves as needed
Method:
Add flour and yeast to a big bowl.
Slowly add the water and mix.
As it comes together, add the rest of the ingredients except the salt.
When the dough is nearly formed, add the salt.
Knead well again for a few minutes and shape into a ball.
Cover with cling film and leave to rise in a warm place for about 2 hours.
On a floured surface, roll out to about 5-6 millimetres thick using a rolling pin.
Using a small pastry cutter, cut out your pizzette and place on a baking tray. You may have to roll up and roll out the dough again to not waste any.
Leave to rest again for about 10-15 minutes.
Preheat oven to 200 degrees C.
Using your fingers, press down slightly in the centre of each pizzette to make a dent.
Add a spoonful of passata sauce, a few mozzarella cubes and a little amount of basil.
Bake for about 12-15 minutes.
