Mortadella and potato pie
Mortadella is a yummy type of cold meat from Bologna. If you haven't tried it you must! I decided to make this rustic pie and it was really really delicious. Serve with a green salad or take in on a picnic to the park. Ingredients for 4 people:
Round of puff pastry
Packet mortadella - 200 g
2 medium size potatoes
2-3 tablespoons Parmesan cheese
1 large egg
Black pepper optional
Method:
Peel, chop into cubes and boil potatoes until just cooked. Leave to cool a bit in a bowl. Or use left over potatoes.
Preheat oven to 180 °C. Chop up the mortadella and add to potatoes.
Add Parmesan, pepper and egg, save a tiny bit of egg for glazing.
Mix up well, trying not to break up the potatoes.
Roll out pastry into small round baking tray. Prick with a fork.
Add mixture inside. Spread evenly.
Fold edges down as shown. Glaze with the bit of egg left over.
Bake for about 30 mins. Turn once during cooking to cook it evenly.
Leave to cool on a wire rack before serving.
