Mussels in a white wine sauce
Deliciously simple yet very tasty. I served it with grilled bread to mop up the sauce. Classic main dish or serve a smaller amount as a starter. Either way, a dish to be served al fresco with a glass of white wine.
Ingredients - serves 2-3:
1 kg mussels
Clove garlic * remove before serving
Glass white wine
Fresh chilli - optional
Bunch fresh parsley
Pinch salt
Olive oil
Your favourite bread
Method:
Clean the mussels by scraping the shell and removing the beard.
Heat oil and garlic in a large wok. Add chilli if using.
On a medium to high heat, add the mussels and cover for one min.
Add the wine and leave uncovered for one min until it evaporates.
Now cover again and leave until they just open - another min or so. Switch off and leave to finish steaming.
Now drizzle the bread with olive oil and grill on both sides until browned.
Serve and enjoy.
