Caramelised slow roasted tomatoes

Pomodorini Confit
These delicious tomatoes can be used as a side dish together with meat or fish or even added to pasta. However you want to use them, you could make a big batch and freeze them so they are ready for future use. Ingredients:
Cherry tomatoes
Olive oil
Pinch salt and sugar
Fresh basil
Method:
Wash and dry tomatoes.
Cut in half and put in a baking tray lined with baking paper.
Spray or drizzle with olive oil.
Sprinkle with a pinch of salt and sugar, add a good amount of chopped basil.
Cook in the oven on a very low setting (about 150 degrees) and forget about it for a good hour or more until caramelised.
