Rocket Pesto

Pesto di rucola

This pesto is obviously different to the Genovese pesto but it is just as delicious with pasta! The rocket gives it a slightly peppery taste, making it quite versatile. You could use this to accompany meats or just enjoy it with pasta as a meat free, healthy meal. Ingredients:

  1. 100 g rocket

  2. 40 g Parmesan cheese

  3. 40 g Pecorino cheese

  4. Clove garlic

  5. Spoonful pine nuts

  6. Olive oil

Method:

  1. Wash and dry the rocket using a salad spinner.

  2. Add all ingredients in a food processor and whizz up until smooth.

  3. Serve with cooked pasta or use your imagination!
