Pesto di rucola
This pesto is obviously different to the Genovese pesto but it is just as delicious with pasta! The rocket gives it a slightly peppery taste, making it quite versatile. You could use this to accompany meats or just enjoy it with pasta as a meat free, healthy meal. Ingredients:
100 g rocket
40 g Parmesan cheese
40 g Pecorino cheese
Clove garlic
Spoonful pine nuts
Olive oil
Method:
Wash and dry the rocket using a salad spinner.
Add all ingredients in a food processor and whizz up until smooth.
Serve with cooked pasta or use your imagination!
