Spaghetti with scallops and squid ink
Really tasty pasta dish! Scallops are just lovely with this but you could use prawns instead. This is ready in 20 minutes and great for any special occasion. Ingredients serves 2:
200 g spaghetti (I used alla chitarra)
200 g scallops
Clove garlic - peeled
6-8 cherry tomatoes - chopped
Fresh chilli to taste
Fresh squid ink
Extra Virgin olive oil
Salt to taste
Fresh parsley to serve
Method:
Bring a pot of salted water to the boil and cook pasta according to instructions.
Heat some oil in a pan. Add the garlic and brown, remove.
Now add scallops and cook for 2 minutes on medium heat.
Next add chilli and tomatoes. Continue simmering for another 3-4 minutes.
Now add the ink to the pasta water.
Add a ladle of pasta water to the sauce, which by now should be ready.
Drain pasta al dente. Add to sauce.
Mix well and serve with fresh parsley.
