Left over spaghetti?

Frittata di spaghetti

Sometimes it's hard to know what to do with left over spaghetti. Here's a recipe I learnt from my mother in law. It is totally delicious. A great lunch idea and also great to cut up and take on a picnic.

Ingredients for 4 people:

  1. 150 or so of left over spaghetti

  2. 2 large or 3 small eggs

  3. 100 g pancetta

  4. Good sprinkle of Parmesan

  5. to taste Salt

  6. Olive oil

Method:

  1. Cook pancetta in a pan with oil. Once browned, add spaghetti. Mix well for 1 min. Add Parmesan and mix.

  2. Beat eggs and parmesan together and add to the pan. Give slight mix so the eggs cover the pan and all the spaghetti. Cook on medium for 3-4 until brown. Turn on the grill to high heat.

  3. Finish cooking the top of the frittata under the grill (You could also flip it over and finish cooking it that way).
