Saltimbocca alla Romana
Saltimbocca means jump in the mouth. That's because they are so tasty that you want more and more. This is a tradiational recipe from Rome and it's so easy to make. It's made with thinly sliced veal in Italy but if you can't get veal, then thinly sliced pork loin would work. Ingredients for 4 people:
8 Thinly sliced veal or pork fillets
8 slices of Parma ham
8 Sage leaves
Knob butter
Olive oil
Small glass of wine (optional)
Method:
Sandwich a sage leaf in between a slice of Parma ham.
Put it on top of a slice of veal and secure with a cocktail stick. Finish all ingredients.
Put a little butter and oil in a pan and heat on medium flame until it bubbles.
Add the meat and brown for 1-2 minutes each side
Now add the wine and let it evaporate. Continue cooking for another 1-2 minutes each side, or until cook and browned a little.
Serve as desired with any remaining juices from the pan on top. I served mine with potatoes.
