Spaghetti allo scoglio
If you love seafood and love pasta, this is for you. Typical dish from Campania, this mixed fresh seafood "primo piatto" is perfect on a Summer's Day. Ingredients for 4 people:
400 g spaghetti
600-800 g mixed seafood - prawns, mussels, clams, squid
Clove garlic
Small tin of chopped tomatoes or chopped cherry tomatoes
Olive oil
Dried chilli to taste - peperoncino
Fresh parsley to serve
Salt to taste
(optional) Small glass of white wine or water
Method:
Make sure your seafood is clean. Remove the beard from the mussels. Soak the clams in water. I left head and tail on the prawns. Bring a pot of salted water to the boil and cook pasta according to instructions (be prepared to drain EARLIER than the suggested cooking time).
Heat garlic and chilli in olive oil. Remove the garlic. After a couple of minutes, add the seafood and turn up the heat to medium high.
Add the wine (or water, if not using wine) and let it evaporate then cover for one min. Add tomatoes, stir and cover for another 3-4 while pasta cooks.
Drain pasta 3 minutes before cooking time. Add to sauce and cook for 3 mins in the sauce tossing continuously. Serve with abundant fresh parsley.
