Spaghetti con pomodorini freschi

This easy spaghetti uses fresh tomatoes and herbs. It really is quick to make and healthy too! Ingredients for 4 people:

  1. 400 g of spaghetti

  2. 15 cherry tomatoes - chopped

  3. Clove garlic

  4. 4-5 fresh basil leaves - chopped

  5. bunch of fresh parsley - chopped

  6. Olive oil

  7. Salt to taste

Method:

  1. Prepare all your ingredients. Bring a pot of salted water to the boil and cook spaghetti according to instructions.

  2. Heat a good amount of olive oil in a pan, add the garlic and cook for about 2-3 mins. Remove the garlic.

  3. Add the chopped tomatoes and cook on medium heat while the spaghetti finishes cooking. Add a ladle of pasta cooking water to help it along.

  4. Drain pasta 'al dente' and add directly into the sauce. Add the herbs and mix well. Serve and enjoy.
