Fregula ai frutti di mare
Fregula is a type of pasta from Sardinia - it looks like couscous but it's not, it's pasta. If you like seafood, you'll love this. Ingredients for 4 people:
500 g Fregula pasta
800 g mixed seafood, I used prawns, mussels and clams
Clove garlic
Peperoncino, dried chilli flakes
200 g best quality plum tomatoes
Olive oil
Parsley to serve
Salt to taste
Method:
Clean the seafood, remove beard from the mussels and soak in cold water. When you're ready to cook, add the mussels and clams to an empty pot with a lid. Turn on the heat and cook until they release their water and they have opened.
Now bring a pot of salted water to the boil and cook pasta according to instructions. Shell the mussels and clams keeping a few back for decoration. Strain the broth using kitchen paper and set a side.
Heat olive oil in a pan. Add the Peperoncino and cook for about 2 mins. Now add all the seafood including the prawns, except for those saved for decoration. Add the tomatoes and broth now and cook for about 5 mins on medium heat while the pasta finishes cooking. Break up the tomatoes with a wooden spoon.
Drain pasta al dente and add to sauce. Add the parsley and mix well. Remove the garlic. Serve immediately and enjoy with a cold glass of wine.
