Frittata di mirtilli
This blueberry frittata is an amazing combination of flavours! I first tried this in Alto Adige and had to recreate it. Believe me it works! Ingredients for 2-3 people:
Blueberry compote:
250 g blueberries
2 tablespoons sugar
Squeeze lemon
For the frittata:
5 large eggs
Sprinkle of sugar
Little oil for greasing
Method:
Wash the blueberries. Put in a pan with the sugar and lemon.
Put on a low heat and let it bubble away for about 20 mins. Compote ready.
Grease a pan with oil. Put on low heat.
Beat eggs together.
When pan is hot, add the beaten eggs and cook on medium low until semi solid on top.
Flip the frittata over and cook for another couple of minutes.
Spread the blueberry compote all over. Fold over and serve with a sprinkle of sugar.
