Deep fried pizza balls

Pizzelle fritte
My husband's family is from Naples and they eat these for Christmas Eve lunch. They really are delicious and a good warm up for the traditional Christmas Eve dinner 'la vigilia di natale'!!! Ingredients for 4 people:
250 g of plain flour
300 ml warm water
12 g fresh brewers yeast or 7 grams of dried yeast
Oil for frying
to taste Salt
Method:
Mix yeast and water. Set a side for about 10 minutes.
Put flour in a bowl.
Gradually add water and yeast to flour. Mixing well.
Your mixture should be light and fluffy and resembling cream in texture.
Cover with cling film and leave to rise for at least 90 -120 minutes in a warm place.
Heat a good amount frying oil in a wok or large pan.
Using a spoon, gently spoon 4-5 spoons of the mixture into hot oil individually. Don't worry if the shape is irregular!!!!
Turn frequently and cook until lightly brown, about 2 minutes each side. Drain on kitchen paper.
Continue until all mixture is used up.
Sprinkle with a little salt and enjoy!
