Caprese pastry nibbles

Cestini caprese

I love making starters and nibbles. Sometimes less is more and what could be tastier or easier than these? Perfect for any occasion and they look great too! Ingredients 4 people:

  1. Roll of puff pastry

  2. 100 g mozzarella ciliegine (di bufala if possible)

  3. 6-7 cherry tomatoes

  4. Fresh basil

  5. Olive oil for greasing

Method:

  1. Preheat oven to 180.

  2. Lightly grease a muffin tray with oil.

  3. Cut out the pastry into small circles using a pastry cutter or glass.

  4. Add to the tray, prick with a fork and bake for about 10 mins.

  5. Leave to cool completely on a wire rack.

  6. Drain the cheese and slice.

  7. Slice tomatoes and add one slice of each on top of your little baskets.

  8. Top with some fresh basil and enjoy.
