Caprese pastry nibbles

Cestini caprese
I love making starters and nibbles. Sometimes less is more and what could be tastier or easier than these? Perfect for any occasion and they look great too! Ingredients 4 people:
Roll of puff pastry
100 g mozzarella ciliegine (di bufala if possible)
6-7 cherry tomatoes
Fresh basil
Olive oil for greasing
Method:
Preheat oven to 180.
Lightly grease a muffin tray with oil.
Cut out the pastry into small circles using a pastry cutter or glass.
Add to the tray, prick with a fork and bake for about 10 mins.
Leave to cool completely on a wire rack.
Drain the cheese and slice.
Slice tomatoes and add one slice of each on top of your little baskets.
Top with some fresh basil and enjoy.
