Torta di Mele
This is a delicious and moist cake that is great for any occasion or time of year. If you want to make it more festive, add a sprinkle of cinnamon to the cake mixture. Ingredients for a 20 cm cake tin:
300 g self raising flour
3 beaten eggs at room temperature
3 good sized apples, I used golden delicious
200 g sugar
Vanilla essence
Juice of one lemon
About 200 ml of milk at room temperature
100 g melted butter
Icing sugar to serve
Method:
Preheat oven to 180 degrees C.
Core, peel, quarter and slice apples. Soak in the lemon juice so they don't go brown.
Pop the butter in the microwave for about a min to melt it.
Use a small amount to grease a cake tin and then line the tin with a sprinkle of sugar to help give the cake a little crunch on the outside.
Mix the dry ingredients together.
Then add the butter and eggs and whisk.
Add the milk slowly while you keep whisking.
When you reach a smooth consistency, throw in the apples, saving some for decoration on top.
Mix now with a spoon until it's all mixed in well.
Spoon into the cake tin and add remaining apples slices on top for decoration.
Bake for about 35-40 mins until golden brown. To check it's cooked, push a cocktail stick into the middle. If it comes out clean, it's ready.
Leave to cool and serve with a good sprinkling of icing sugar.
