Apple cake

Torta di Mele

This is a delicious and moist cake that is great for any occasion or time of year. If you want to make it more festive, add a sprinkle of cinnamon to the cake mixture. Ingredients for a 20 cm cake tin:

  1. 300 g self raising flour

  2. 3 beaten eggs at room temperature

  3. 3 good sized apples, I used golden delicious

  4. 200 g sugar

  5. Vanilla essence

  6. Juice of one lemon

  7. About 200 ml of milk at room temperature

  8. 100 g melted butter

  9. Icing sugar to serve

Method:

  1. Preheat oven to 180 degrees C.

  2. Core, peel, quarter and slice apples. Soak in the lemon juice so they don't go brown.

  3. Pop the butter in the microwave for about a min to melt it.

  4. Use a small amount to grease a cake tin and then line the tin with a sprinkle of sugar to help give the cake a little crunch on the outside.

  5. Mix the dry ingredients together.

  6. Then add the butter and eggs and whisk.

  7. Add the milk slowly while you keep whisking.

  8. When you reach a smooth consistency, throw in the apples, saving some for decoration on top.

  9. Mix now with a spoon until it's all mixed in well.

  10. Spoon into the cake tin and add remaining apples slices on top for decoration.

  11. Bake for about 35-40 mins until golden brown. To check it's cooked, push a cocktail stick into the middle. If it comes out clean, it's ready.

  12. Leave to cool and serve with a good sprinkling of icing sugar.
